Familie Giovanett baut am Römerhof eine alte Maissorte an, die bis vor 50 Jahren im Südtiroler Unterland als "Tirggplent" bekannt war. Die sortentypisch orangeroten Maiskörner werden nach mehreren traditionellen Arbeitsgängen ("oklaubn", "tschilln", "aufhängn", "omochn") in der hofeigenen Steinmühle zu drei verschiedenen glutenfreien Maismehlarten gemahlen.
